Day 1: Duane has been prepared Zuni Cafe style and is ready to dry in the fridge for a few days.

Day 2,3: Here's Duane after three days. The skin has tightened up nicely, i had to drain off a small amount of liquids from the pan due to the salting. He's dry and ready for Stella.

Started breast side up for 20 minutes, fliped him for another 20, then 10 minutes to recrisp the top. YUM.
